ε-Polylysine is a light yellow, highly hygroscopic powder with a slightly bitter taste.

A linear lysine polymer produced by Streptomyces fermentation, it contains 25–30 lysine units and shows optimal broad-spectrum antibacterial activity at a molecular weight of 3600–4300. It is relatively stable to pH fluctuations and heat, with efficacy influenced by polymerization degree and environmental conditions.
Originated in Japan, it inhibits microbial growth (especially Gram-positive bacteria) at concentrations as low as 5 ppm. It is highly water-soluble and can be metabolized into lysine by proteases.
