Sodium Metabisulfite (Na₂S₂O₅) is a white crystalline or powdery solid with a faint sulfur odor. It is toxic by inhalation and causes severe irritation to skin and mucosal tissues. At high temperatures, it decomposes, releasing toxic fumes of sulfur oxides and sodium oxide.

Sodium Metabisulfite has strong reducing properties. It is widely used in the food industry as an antioxidant, preservative and bleaching agent for meat, wine, preserved fruits and other products.
