Sodium polyacrylate is a white, odorless, tasteless powder with strong hygroscopicity. As a high-molecular polymer containing hydrophilic and hydrophobic groups, it dissolves in water to form a highly viscous transparent solution. The high viscosity of its 0.5% aqueous solution stems from ionic effects of numerous anionic groups, which stretch polymer chains and greatly raise apparent viscosity. Its viscosity is about 15–20 times that of CMC and sodium alginate..
